








160mm Honyaki Nakiri in W2
This nimble nakiri is ground very thin and convexed on stones. It should glide through produce with ease. The heat treatment is done in the traditional Japanese method of Honyaki. Clay is applied to the spine of the knife to insulate it during the quench, which results in a differential hardening pattern known as a hamon, which is essentially a freeze frame of the heat leaving the blade and indicating where the crystalline structure hardened and where it did not. The hamon is brought out of the steel via rounds of polishing and etching.
The handle is made from Argentine Lignum Vitae and hammered Silica Bronze. Lignum Vitae is naturally oily, dense, and stable. As it ages it naturally turns more green/blue.
